As I write this I am still recovering from what I refer to as the “vacation blues”. Basically, every time I vacation somewhere more than 2 days I spend the next week of my life moping around wishing I was still there. This week I’ve been hit with this especially hard since I have a v deep love for Denver and Colorado, and can’t believe its been nearly 2 years since I moved away from that glorious state.
What brought me back to the mile high city was the holy matrimony of one of my college besties (Hi Katt!), who tied the knot in one of the most beautiful spots in Evergreen. Our 5 days in sunny CO was spent not only celebrating the happy couple but also eating an exorbitant amount of food and soaking up as much sunshine and mountain air as humanly possible. To be honest, being in a place where it is sunny so often made me scratch my head as to why I moved to New York in the first place, lols. I’m also coming out of a nearly 6 month long, east coast winter so I feel like those feelings are valid.
Any free moment we had was used to stuff our faces with tacos from Pinche’s, moules frites from Bistro Vendome, oyster po’ boys from Sassafras, wings and chilli cheese fries from Fire on the Mountain and washing it all down with rose flights at CRÚ; and sadly that’s just scratching the surface. Although New York has some pretty amazing food I sure did miss my go-to Denver eats, and am counting the days until my next trip out west.
